Make a Valentine’s Day Breakfast: Create a Morning Meal for your Mate

Strawberries and chocolate are such a romantic combination. The flavors are rich and sweet and just plain luscious. What better way to wake up and have a Valentine’s treat of strawberries and chocolate waiting for you at the breakfast table. Here are a few breakfast recipes to entice the taste buds of your companion on Valentine’s Day using strawberries and chocolate.

Strawberry Chocolate Chip Pancakes

Talk about decadent. These pancakes will put you over the edge in love with just about everything in the world.

Ingredients:

  • 1 cup flour
  • 1-1/2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 eggs
  • ½ cup sour cream
  • ½ cup milk
  • ½ teaspoons vanilla
  • 2 tablespoons butter, melted
  • 1 cup sliced strawberries
  • ½ cup chocolate chips

Directions:

  1. In a large bowl combine flour, sugar, baking powder, baking soda, and salt.
  2. In a medium bowl combine eggs, sour cream, milk and vanilla.
  3. Wisk in the melted butter.
  4. Pour egg combination into the flour combination and combine by hand.
  5. Fold in sliced strawberries and chocolate chips.
  6. Get a skillet hot and pour in enough vegetable oil to cover the bottom.
  7. Ladle batter into the skillet and cook until bottom is brown, then flip and brown other side.
  8. Remove from skillet and butter.
  9. Spread with strawberry syrup or jam and sprinkle on some reserved strawberry slices and chocolate chips or top with whipped cream and chocolate syrup.

Strawberry Chocolate Chip Muffins

Maybe you have to be on the run Valentine’s Day Morning. These muffins are just the thing. Your significant other may dash out the door to get to work but they will definitely give you a big kiss before they leave with their muffin.

Ingredients:

  • 2 – ¼ cup flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • ½ cup vegetable oil
  • ½ cup strawberry yogurt
  • 1 teaspoon vanilla
  • 1 cup sliced strawberries
  • ½ cup chocolate chips

Directions:

  1. Preheat oven to 400 degrees. In a large bowl combine flour, sugar, baking powder, baking soda, and salt.
  2. In a medium bowl combine eggs, oil, yogurt, and vanilla.
  3. Pour egg combination into the flour combination and mix until well moistened.
  4. Fold in strawberries and chocolate chips.
  5. Place spoonfuls to at least half fill paper lined muffin tins.
  6. Bake 25 minutes or until brown and a toothpick comes out clean when inserted into the center of a muffin.
  7. Remove to a rack.
  8. Serve warm or cold. Should make 12 to 14 muffins.

Strawberry Sour Cream Chocolate Chunk Quick Bread

Quick breads are an easy way to give the ones you love a treat. Bread is portable and can go in lunch boxes or be served for breakfast.

Ingredients:

  • ½ cup unsalted butter
  • ¾ cup sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup sour cream
  • 2 cups sliced strawberries
  • ½ cup chocolate chunks (a little more if you like chocolate – no more that ¾ cup)

Directions:

  1. Preheat oven to 350 degrees and grease a 9 x 5 inch loaf pan.
  2. In a mixing bowl cream butter and sugar.
  3. Add eggs and beat one at a time.
  4. Add vanilla. In a large bowl combine flour, baking powder, baking soda, and salt.
  5. Add alternately with the sour cream.
  6. Mix in strawberries and chocolate chunks by hand.
  7. Pour into loaf pan.
  8. Bake about 55 minutes or until a toothpick inserted into middle of loaf comes out clean (check after 50 minutes).
  9. Let cool in pan about 30 minutes and turn out onto a rack.

Valentines Day is a great day to show your significant other, son or daughter, mom or dad or other people in your life how much you love them by giving them a treat with chocolate and strawberries. Start the day off with a big surprise.
